    1/2 large avocado
    1/2 medium or large tomato
    2 egg whites
    1/2 C alfalfa sprouts
    2 Tbsp water
    1/8 tsp salt
    Plain yogurt or sour cream (for garnish) - not included in recipe totals


Whisk together egg whites, water and salt. Pour into small pre-heated skillet. Cook until egg is set then add avocado and tomato. Cook until veggies are warm. Place on plate and top with alfalfa sprouts. Garnish with plain yogurt or sour cream.
