Introduction

Number of Servings: 12

Ingredients

    1 egg (or 1/4 cup egg product)
    0.3 cup margarine, melted
    1 tsp bakign powder
    1 tsp baking soda
    1/2 tsp salt
    3/4 cup sugar
    3-4 bananas, mashed
    3/4 cup wheat bran
    3/4 cup whole wheat flour
    3/4 tsp ground cinnamon
    3/4 tsp ground nutmeg

Directions

Beat together the melted margarine, egg, sugar and mashed banana.

Mix the dry ingredients.

Add the wet ingredients to the dry ingredients, stirring until just combined.

Pour into a greased muffin tin.

Bake for ~30 minutes at 375, until they pass the toothpick test. They will become browned on the outside, but don't worry, they didn't burn.

Makes 12 muffins.
