Introduction

A quick stir fry of just chayote done the South Indian way A quick stir fry of just chayote done the South Indian way
Number of Servings: 4

Ingredients

    1) Chayote (Chow Chow in Tamil) - 3 - peeled, diced and boiled.
    2) Olive oil - 2 tsp
    3) Sambar Powder - 1.5 tsp (alternatively, curry powder) - change the measurement to taste
    4) Salt to taste
    5) Mustard Seeds - 1 tsp
    6) Urad dal - 1 tsp
    7) Curry leaves - a sprig

Directions

1) Peel, dice and boil the chayote until they are done.
2) In a pan, add the oil and let it heat. Do not let it get too hot, olive oil should not be allowed to overheat.
3) Add the mustard seeds and wait for them to splutter.
4) Add the urad dal, stir it until the dal turns a light shade of red. (it can burn easily, so watch carefully).
5) Add the chayote, salt and sambar powder and stir. Let it heat for around 3 minutes.
6) Add curry leaves and stir.

A quick stir fry is done and ready to serve.
