    2 cups dried whole wheat pasta, macaroni or penne
    2 tablespoons margarine
    4 teaspoons minced onion
    1 tablespoon all-purpose flour
    1/4 teaspoon dry mustard
    1/8 teaspoon ground white (or black) pepper
    2 cups skim milk
    7-oz package shredded fat-free cheddar cheese
    1 teaspoon dried parsley flakes


Cook the pasta according to label directions. While the pasta is cooking, preheat the oven to 400 F. Melt the margarine in a 2-quart saucepan over medium heat. Add the onion, flour, dry mustard, and pepper to the pan. Cook briefly until flour turns light golden brown. Slowly stir in the milk. Cook, strring frequently with whisk, until thickened, about 8 minutes. Remove pan from heat. Add the cheese to the pan and stir just until it is melted, about 10 seconds. When the macaroni is tender, drain in a colander and transfer to saucepan with the cheese sauce. Stir. Transfer mixture to a casserole dish. Sprinkle the parsley on top. Bake, uncovered, in the preheated oven for 20 minutes.
