Ingredients

    1 oz soy mozzarella or pepper jack cheese
    2 fresh eggs
    1/2 cup egg beater egg white
    2 cups diced asparagus fresh
    1 diced onion
    4oz precooked chicken breast, diced
    rosemary, thyme, other seasonings
    1/4 cup bulgur
    1 cup fat free milk
    1/2 cup 1% no salt added Lucerne cottage cheese

Directions

Unroll pie crust and bake in pie pan at 450 until just golden. Cool. Reduce oven to 350.

Stir fry until just tender the onion, seasonings, asparagus, chicken bits. Set aside.

Beat together the eggs, egg white, milk, cottage cheese.

Put asparagus mix into pie shell, and put half of cheese allottment over it. Then, carefully pour in the milk/egg mix over top, distributing evenly. Top with the rest of the cheese, and 6 pinwheel asparagus spears.

Bake at 350 until set, maybe an hour baking time. Cool, cut into 6 servings, serve with fresh spinach salad.
