    5 baked potatoes with skins (these can be done in the microwave or in the oven ahead of time).

    3 cans of chicken broth

    4 tsp. minced garlic

    1 tsp. salt

    1/2 tsp pepper


Cut potatoes in eighths in a saucepan. Use a wooden spoon or pastry blender to mash them up a bit. Add garlic, salt and pepper. Add one can of chicken broth. Mix well. Add the rest of the chicken broth. Simmer over low heat for about 20 minutes. May be garnished with minced green onion, bacon or cheese when served. Makes 8 - 1 cup servings.
