    6 large cabbage leaves
1 cup cooked couscous (great way to use leftovers)
1 cup cooked black beans (again...leftovers)
about 1 tsp ground turmeric, more or less to taste
about 1/2 cup onions (again, more or less...)
    about 2 cloves garlic
    about 2 tbsp olive oil
    1 cup tomato sauce

cook garlic and onions in olive oil until onions become translucent. Mix with couscous, black beans and turmeric until well blended. Spoon mixture into center of cabbage leaf and carefully roll (like an egg roll), you might have to use a toothpick to hold together. Repeat until all mixture is used (you might need a few more leaves if you make smaller rolls). Place rolls into steamer until cabbage leaves are tender, about five minutes or so.
When done, place on serving plate and spoon tomato sauce over rolls.

Red peppers and/or black olives added to the tomato sauce makes a very nice addition

Serving Size: makes about 6 servings
