1 container plain yogurt

Directions
Add salt to plain yogurt. Increase amount of salt depending on how salty you want the cheese to be. Mix well.
Get a clean cheesecloth or coffee filter (an old clean handkerchief will work too) and place it over a strainer. Then place the strainer over a bowl.
Pour the yogurt onto the cheesecloth and let the liquids drain. I would usually gather the ends of the cheesecloth and tie a string just above where the cheese forms a ball. Then tie it on a spoon or stick so that you can rest it on the opening of the bowl.
Let it hang there and drain for at least 24 hours. Let it drain longer if you prefer a drier consistency.
Store in the fridge in an airtight container.
