    4 large eggs
    2 egg whites
    1/8 tsp salt
    1/8 tsp black pepper
    1Whole Wheat tortilla
    1/4 cup olive oil
    1 tomato chopped
    1/2 tsp dried oregano
    1 tbsp shredded cheese


1) beat eggs, egg whites, salt and pepper in bowl.
2) Brush both sides of tortilla with oil.Heat non stick skillet over medium heat.Place gorilla in skillet n cook for 1 minute.Turn over and cook another 1 minute.Remove from pan and place on cutting board or platter.
3) return skillet to heat.Add two-thirds of remaining oil.Add egg mixture n scramble.When set remover from pan and spoon evenly over tortilla.
4) Return pan to heat.Add remaining oil, oregano and tomato.Heat 2 minutes, tossing till tomatoes get juicy.Spoon evenly over eggs.Sprinkle with chesse.Cut into 4 wedges and serve.
