    6 eggs
    1 cup fat free milk
    1/2 cup Lucerne 1% no salt added cottage cheese
    2 cups asparagus, diced
    1 medium onion, diced
    1 cup diced mushrooms
    1/2 cup cooked bulgur
    2 tsp ground cinnamon
    1 tsp black pepper


PREHEAT TO 375, get muffin tins ready. I used one that makes 24 mini muffins, and a muffin top pan that makes 2 tops.

beat egss and milk and cottage cheese together.

stir fry until just limp the onion, asparagus, bulgur, bell pepper, and mushrooms. Add spices, cool.

mix with egg/milk.

Prepare muffin tins, spray with PAM.

Bake until set.
