    3 Tbsp sunflower oil
    12 oz chicken breasts, cut into thin strips
    1 onion, sliced
    1 clove garlic, crushed
    1 red bell pepper, seeded, and sliced
    1 1/4 cups snow peas
    4 Tbsp sherry
    1 Tbsp tomato paste
    finely grated peel and juice of 1 orange
    1 tsp cornstarch
    2 oranges
    1 cup beansprouts
    cooked rice or noodles, to serve (NOT INCLUDED in NUTRITIONAL INFO!)


1. Heat the oil in a large preheated wok. Add the chicken and stir-fry for 2-3 minutes, or until sealed on all sides.

2. Add the onion, garlic, bell pepper, and snow peas to the wok. Stir-fry for a further 5 minutes, or until the vegetables are just tender and the chicken is completely cooked through.

3. Mix together the soy sauce, sherry, tomato paste, orange peel and juice, and the cornstarch. Add to the wok and cook, stirring, until the juices start to thicken.

4. Using a sharp knife, peel and segment the oranges. Add the segments to the mixture in the wok with the beansprouts and heat through for a further 2 minutes.

5. Transfer the stir-fry to serving plates and serve at once with cooked rice or noodles.
