Number of Servings: 12


    1 TBS olive oil
    1/2c onion, diced
    1/2c bell pepper, diced
    pinch salt
    2 garlic cloves, minced
    4 oz mushrooms, sliced
    1c dry split peas (yellow would be best)
    1/2c uncooked brown rice
    1 tsp coriander
    1 tsp cumin
    3c vegetable broth
    1 c plain bread crumbs, divided


Heat olive oil in heavy sauce pan. Add onion, pepper, and pinch of salt and sweat for 5 minutes. Add garlic and mushrooms and sweat for 4 more minutes. Add split peas, rice, spices, and broth. Bring to a boil, then reduce heat to simmer and cook for 1 hour. Pulse in food processor 4-5 times (do not puree). Add 3/4 c bread crumbs and mix in. Refrigerate for 20-30 minutes. Scoop out and form into balls, then flatten into patties. Lightly dredge in bread crumbs and cook in lightly oiled pan for 3-4 minutes per side.
