Ingredients

16 lasagna noodles2 C lowfat ricotta cheese
2 C 1% cottage cheese
2 oz lowfat mozzerella cheese- shredded
3 cups fresh spinach-chopped
1 C chopped onions
1 - 28 oz can crushed tomatoes
3 T dried basil
1 T dried oregeno
2 T garlic powder
2 T dried parsley
1 T black pepper
1T water
Directions
in large pot boil water and cook noodles fully
in large nonstick saucepan- cook spinach until wilted and remove
add onions to saucepan and cook w/ 1 T water until slightly soft
add crushed tomatoes, garlic, basil, oregeno, pepper to saucepan with onions and simmer for 30-45 minutes
in large bowl- mix cottage cheese, ricotta, dried parsley and cooked spinach (divide this into 18 servings)
take one noodle and spoon cheese and spinach mix over entire length- roll up and place in large sprayed casserole pan- repeat until all noodles and cheese mix finished
spoon tomato sauce over rollups sprinkle mozzerella cheese over top, cover with foil and bake for approx. 20 minutes at 350 degrees
