Number of Servings: 6


    2 large eggs
    1/2 cup liquid eggs or egg whites
    1 small can (5 oz) evaporated milk
    2 tsp Dijon mustard
    1/2 tsp salt
    1/4 tsp ground black pepper

    Filling ingredients:
    1 tsp olive oil
    6 ounces sliced bacon, cut into 1-inch pieces
    1 large leek (8-10 oz), darkest green section trimmed, light green and white section quartered lengthwise, sliced thin, and washed thoroughly
    Scant 1/4 tsp dried thyme leave
    4 ounces crumbled fresh goat cheese (scant 1 cup)


Adjust oven rack to center position and heat oven to 400 degrees.
Grease 9-inch Pyrex pie plate.

Place bacon on paper towel on microwave safe plate, cover with another paper towel to drain any excess grease. Microwave 3-4 min or until desired crispness.

Heat oil in large skillet over medium-high heat. Add leek, saute until tender, 5-6 minutes.

Whisk eggs, milk, mustard, salt and pepper in a medium bowl. Stir in thyme, bacon, leeks and goat cheese.

Pour mixture into pie plate and bake until just set, 25 to 30 minutes. Remove from oven and let rest 5 minutes. Cut into 6 wedges and serve.

Serving Size: makes 6 wedges from 9in pie plate
