Introduction

Ingredients

    3 to 3.5 oz Tilapia
    1 tsp olive oil
    Dash of garlic powder, about 1/4 tsp or less
    1/2 tsp dried thyme, crushed (fresh in the summer)
    Fresh ground pepper
    1/2 tbsp fresh shredded parmesan cheese

Directions

Rinse tilapia and pat dry with paper towel. Heat up broiler. Use a broiler friendly pan, I use jelly roll pans. Pour 1 tsp olive oil onto pan and place fish in oil turning it over to coat the fish on both sides. Season top with garlic powder, dried thyme and ground pepper.

Note: During the summer I swap the dried thyme with some fresh thyme.

Place pan under broiler, broil for 4 minutes, remove and add parmesan put back under broiler for another minute. Let rest for 1 minute then serve.

Note: Time of cooking depends on your oven, mine takes about 5 minutes. I like to serve this with wild rice and parmesan zucchini. Both recipes are posted in my cookbook.
