Wonderfully moist and low cal at 101 cal a muffin! Wonderfully moist and low cal at 101 cal a muffin!
Number of Servings: 12


    280g Plain Flour
    1 tbspn baking powder
    2 eggs
    100g raw grated carrot
    1 stalk rhubarb
    100 ml skimmed milk
    drop vanilla essence
    1/2 tspn ginger
    4 tspn splenda


Sift flour and baking powder.
Add grated carrot and rhubarb.
Add splenda, ginger and essence

In a seperate dish mix eggs and milk together with vanilla essence. Add this wet mixture slowly to dry mixture

Pour into muffin tins and bake for 20 minutes

Serving Size: makes 12 muffins
