    2 Tbls flour
    1/4 tsp salt
    1/4 tsp black pepper
    2 4oz boneless, skinless chicken breast
    3 tsp canola oil
    4 Tbls minced onion or shallots
    2 cups sliced mushrooms
    1/2 cup faty free chicken broth
    1/2 cup white wine


Mix 1 Tbls flour with salt & pepper, and dredge chicken breasts. Heat 2 tsp canola oil in a skillet over medium heat. Brown chicken breasts on both sides until no pink remains. Remove from pan and keep warm. Put the remaining tsp of canola oil in pan and turn heat up to medium high. Add onions and cook 30 seconds. Add mushrooms and cook, stirring often, until they start to brown. Add the other Tbls of flour and cook 1 minute stirring constantly. Add chicken broth and wine, and simmer for 5 minutes until thickened. Add chicken to pan for a few minutes to warm them up and serve.
