Ingredients

    2 !/2 c. whole wheat flour 2 eggs
    1/2 c. ground flax 2/3 c. oil
    1/2 c. sugar 1 tsp. vanilla
    1 tsp. salt
    1 tsp. soda
    1 tsp. baking powder
    1 tsp. cinnamon
    1 19-oz. can crushed pineapple, undrained
    2 c. mashed banana
    1 c. chopped walnuts
    Icing:
    1/4 c. butter
    1/2 8-oz. pkge. lite Philadelphia cream cheese
    1-1/4 c. confectioner's sugar
    1 tsp. vanilla

Directions

Combine dry ingredients in a large bowl. Add eggs and oil, stir just until dry ingredients are moist. DO
NOT BEAT. Stir in vanilla, pineapple, nuts and banana. Spoon batter into 2 9-inch cake pans or in a 13x9 inch cake pan or in a Bundt pan. Bake at 350-degrees for 25-30 minutes. Ice with a cream cheese icing (same as for carrot cake) and refrigerate
