    1 can Chicken broth - Swanson 100% Fat Free
    1 can Black Beans
    1 cup Quinoa
    1 cup chopped onions
    4 cups Spinach, fresh
    2 tbsp Coconut Oil
    2 oz Feta Cheese
    2 cloves garlic - minced
    Salt & Pepper to taste


simmer 1 can of chicken broth - add quinoa - reduce heat - cover and simmer for 20 mintues
sautee onions, garlic and can of rinsed black beans in coconut oil - salt and pepper to taste
when onions are translucent, add spinach, cooked quinoa, and 1/4 cup of water and cover
Cook until spinached is wilted
Crumble feta cheese on top and serve
