I use precooked chicken to cut down the prep time. I use precooked chicken to cut down the prep time.
Number of Servings: 6


    6 low carb tortillas
    Meat from 4 chicken breasts, bones and skin removed
    2tbsp dehydrated onion
    2 tsp taco seasoning (optional)
    1.5 cup enchilada sauce (green)
    4 oz shredded cheddar cheese


Add taco seasoning to cooked chicken along with onion, about 1/3 of the shredded cheese and about 1/4 cup enchilada sauce.
Divide chicken mixture between 6 low carb tortillas
Roll up and place seam side down in baking dish.
Cover with remaining sauce and cheese.
Bake at 350 for about 20 minutes or until cheese bubbles.

Serving Size: Makes 6 Enchiladas
