Introduction

I've played around with Grandma's recipe a little bit to try and make it a bit healthier. The original recipe only called for 1 cup of rhubarb, but I think more is better. I've played around with Grandma's recipe a little bit to try and make it a bit healthier. The original recipe only called for 1 cup of rhubarb, but I think more is better.
Number of Servings: 12

Ingredients

    250 ml whole wheat bread flour
    250 ml all purpose flour
    125 ml sugar
    12 ml baking powder
    1 ml salt
    1 tbsp flax seed, groung
    1 tbsp fibre
    175 ml milk
    75 ml oil
    1 egg, beaten
    3 ml almond extract
    1.5 cups rhubarb, chopped

Directions

1. Sift together dry ingredients: whole wheat flour, all purpose flour, sugar, baking powder, salt, flax seed, and fibre.
2. In second bowl, beat egg, add milk, oil, and almond extract.
3. Make a well in the dry ingredients.
4. Add wet ingredients to dry ingredients and stir only until just mixed.
5. Fold in rhubarb.
6. Spoon into greased muffin tin.
7. Mix brown sugar and cinnamon together and sprinkle on top of muffins.
8. Bake at 375 for 15 - 20 minutes

Serving Size: Makes 12 muffins
