    1 1/2 lb salmon fillet, skin removed
    1 small bag baby spinach, roughly chopped
    3 scallions, finely sliced
    1 Tbsp fresh garlic, minced
    1-2 large eggs
    1 Tbsp soy sauce
    1/2 Tbsp fresh parsley, chopped
    salt and pepper, as needed
    1 Tbsp olive oil


Cut salmon into 1/4 inch dice, then stir together with spinach, scallions, garlic, eggs, soy sauce, and parsley until well combined, seasoning with salt and pepper as needed.

Form mixture into 4 equal size patties, no more than 3/4 inch thick.

Heat the olive oil in a 12-inch nonstick skillet over medium heat. Cook the salmon cakes for 5 to 6 minutes on each side or until golden brown and cooked through.

Serve immediately.
