    1 medium shallot, finely diced
    1/3 cup dijon mustard
    1/4 cup white wine vinegar
    2 cloves garlic, minced
    1/2 cup olive oil
    1 Tbsp thyme
    1 tsp parsley
    olive oil, as needed
    4 boneless skinless chicken breasts
    salt & pepper, as needed


For the mustard vinaigrette, whisk together the vinegar, mustard and garlic in a medium to large mixing bowl until well combined. Slowly add the olive oil, whisking while adding it to the vinegar and mustard mixture until it is well incorporated. Add the shallots, herbs and season with salt and pepper to taste.

Combine vinaigrette and chicken and allow to marinate for 3-4 hours, or overnight.

Remove chicken from vinaigrette and grill over medium to medium-high heat for 6-7 minutes on each side, or until the chicken reaches an internal temperature of 165.

Allow chicken to rest 5 minutes before serving.
