    1 Tbsp Extra Virgin Olive Oil
    2 Boneless, Skinless Chicken Breasts
    2 ounces Orange Juice
    1/2 cup Apricot Jam
    2 cups Apricot Halves, diced (drained, if using canned)
    1/4 tsp Ground Ginger
    1/4 cup Scallions, Thinly Sliced
    Salt & Pepper, as needed


In large skillet, heat olive oil over medium heat. Lightly season chicken breast with salt and pepper; place in skillet to saute, turning once to lightly brown on each side, about 3 to 4 minutes per side. Remove the chicken from the skillet, set aside on a clean plate and cover with foil.

Reduce the heat in skillet to medium-low, add orange juice and apricot jam and stir to combine; bring to simmer. Add diced apricots and ground ginger; continue to simmer.

Return chicken to pan, along with any juices from plate. Coat chicken with apricot sauce. Add scallions and continue to simmer til chicken fully cooked.

Adjust seasonings with additional ginger, salt, and pepper if desired. Serve chicken with sauce and sprinkle with scallions for decoration.
