    1.5 cups chickpeas, drained and rinsed
    2 eggs, beaten
    2 cloves garlic, minced
    3/4 cup onion, chopped fine
    1/2 tsp salt
    1/4 tsp pepper
    1/2 tsp cumin
    1/4 tsp red pepper flakes
    1 tsp oregano
    2 Tbsp chopped fresh parsley (optional)
    1/2 cup grated cheese, mozza or a mix


Preheat oven to 350F and line a backing sheet with parchment paper.

Mash chickpeas until no whole beans remain. Mix in all remaining ingredients until well combined. If you have time, chill mixture in fridge for an hour so mixture firms up (optional). Form mixture into balls or about 1-2Tbsp. Place onto prepared baking sheet.

Bake for 20-25 minutes until edges are starting to brown.

If serving on spaghetti, simmer baked balls in your favourite spaghetti sauce for a few minutes before ladling all over pasta.
