Ingredients

* 1 cup sugar or sugar substitute (I can't stand sugar subs, but I'm sure using "splenda for baking" or something similar will cut calories - I'm just a firm believer that sometimes you just need a little real sugar!
* 1 cup honey
* 1/2 cup applesauce
* the equivalent of 4 eggs (I use 3 eggs worth of eggwhite and one whole egg, but you can do it however you prefer)
* 1 cup orange juice
* 2 1/2 cups whole wheat flour
* 3 teaspoons baking powder
* 1/2 teaspoon baking soda
* 1/2 teaspoon salt
* 1 teaspoon ground cinnamon

Directions
Preheat oven to 350 and grease rectangular baking pan or two round cake pans.
mix together ingredients. Stir until smooth and well blended. Pour into pans. Bake in the oven for about 40 minutes, or until you can stick a knife in it and have the knife come out clean.
I cut the pieces small, since it's better for sharing that way, so this will make at least 20 servings for me - more or less depending on how you cut it!
Another adaptation that I like - slice an apple very thinly. After greasing the pan, line the bottom of the pan with the apple slices, pour the batter on top. If you're using round cake pans, then when cool flip the pan over and gently knock the cake out, and you'll have a nice apple topped cake. If you're using a rectangular glass pan, then you'll simply have a nice apple layer on the bottom, which is pretty tasty too!
