    About 2 lb beef brisket
    1 can Diced tomatoes no salt
    1 medium onion sliced thinly
    4 garlic cloves sliced thinly
    4 or 5 sprigs fresh thyme (you can use dried, or you can use Basil, oregano, any herb you prefer)
    salt and pepper


Place all ingredients in slow cooker, I put the tomatoes and onions on top of the meat. Turn on low and cook for about 6 or 7 hours or until tender.

Serving Size: Makes about 6 servings
