Ingredients

    Pepper, black, 1 tsp (remove)
    Jennie-O Lean turkey Kielbasa, 14 oz (remove)
    Red Bell Pepper, raw, 1 medium pepper, 4 serving (remove)
    Red onion, raw, 1 cup (remove)
    Sweetpotato, fresh, 1 sweetpotato, 5" long (remove)
    Oregano, ground, 1 tsp (remove)
    Parsley, dried, 1 tsp (remove)
    Salt, 2 dash (remove)
    Canola Oil, 1 tbsp (remove)
    *Muir Glen Diced tomatoes, 0.5 cup (remove)

Directions

nuke potato 10 min. to soften
cut up kielbasa and veggies into bite size pieces
saute in skillet with canola oil and spices
add 1/2 cup drained can of tomatoes
cook over medium heat until peppers and onions are soft
Serving Size: makes 3 servings of 2 cups
