    Ground beef, 1 lb
    Chopped onion (1/2-1, depending on size and preference)
    Potatoes, 2 cups cubed
    Celery, 1/2-1 cup chopped
    Skim milk, 2.5 cups
    Low fat cheddar, 1 cup grated
    Bouillon granules, cubes or paste
    Seasonings to taste
    Optional: cooking spray


Brown beef in a non-stick pot. May need to spray some cooking spray to prevent sticking. Once beef is brown add onions, potatoes, celery, water and bouillon granules. Bring to boil and cook on low until vegetables are tender (approx. 20 minutes).
Blend 0.5 cup of milk with the flour, add to pot and cook, stirring, until thick and bubbly. Add the remainder of the milk and stir until smooth. Take off heat and add cheese. Season to taste.
