    10 eggs
    1 red pepper
    1 yellow pepper
    1 large onion
    herbs/spices/s&p to taste


Heat large oven proof frying pan over med to high heat.
Preheat broiler to medium
Slice onion; add to pan with approx 1-2 tbsp water.
Cook covered for 5 minutes
Slice, deseed, chop peppers
Add to frying pan after 5 minutes adding more water if needed and cook for approx 5 minutes until slightly softened.
While peppers/onions are cooking whisk your eggs with any spices/salt/pepper you desire
Increase heat and uncover to get rid of the rest of the water from steaming. Add herbs of your choice.
Add eggs and stir gently. Reduce heat back to medium and allow to cook until done about 1/2 way through. Place pan under broiler and keep checking until the top is cooked and going golden brown.
Serve with toast, on it's own or with a side salad.

Serving Size: serves 8 as a light meal or 4 as a main course
