Introduction

Ingredients

    1.25-1.5 lbs. boneless skinless chicken breast
    1 Medium, crisp apple
    3 Ribs of celery
    1 Red bell pepper
    1/2 cup Almonds, slivered or whole
    1 5.3 oz tub of Dannon Plain Greek Yogurt
    4 tbs. Hellman's Mayo (not reduced fat)
    .5 tsp. Garlic powder
    Salt
    Pepper

Directions

Poach chicken breasts in chicken broth or water until done, remove and cool. While chicken cools, chop apple, celery and red pepper into small dice. Chop almonds if using whole. Once cool, dice chicken breasts into bite-size pieces. In a large bowl, combine all ingredients; chopped chicken, veggies, almonds, yogurt, mayo and mix thoroughly. Add garlic poweder, salt and pepper to taste. Enjoy!
