Ingredients

1 1/2 lbs. ground turkey
3/4 cup seasoned bread crumbs
1 egg large
1 tsp. salt
1/4 tsp pepper
Topping
4 oz tomato sauce
1/2 cup shredded seriously sharp cheddar cheese
Filling
10 oz package baby spinach
1 1/2 cup shredded seriously sharp cheddar cheese
1 Tbsp Italian seasoning
2 clove garlic put through press
1 med/large vedalia onion
4 oz sliced baby portabella mushrooms
Directions
Heat oven to 375
In a bowl mash turkey, crumbs, egg, salt, and pepper
On wax paper flatten in rectangle about 1/2 inch thick
Saute mushroom, garlic, and onion till tender add spinach and wilt
Let cool slightly
Spread spinach mixture over flattened turkey
Sprinkle evenly with 1 1/2 cup shredded cheddar
Sprinkle evenly with Italian seasoning
Carefully roll and put in bread pan
Bake at 375 for 55 minutes
Remove from oven and spread tomato sauce and 1/2 cup shredded cheddar on top and return to oven for 5 minutes
Let cool 5-10 minutes
Slice and enjoy
