Ingredients

    ¾ cup chocolate chips
    1 t. almond or vanilla extract
    1 can white great northern or cannelloni beans (drained and rinsed)
    2 eggs (room temperature)
    1/2 tsp baking powder
    1T. cocoa powder
    optional
    ½ t. cinnamon
    ¼ t. nutmeg


Directions

Preheat oven to 350 F. Drain and rinse beans and place in blender or food processor until smooth. Add eggs one at a time and puree. Add baking powder to bean puree. Melt chocolate chips in microwave, add extract to melted chocolate and stir. Mix some of the bean-egg batter into the chocolate to thin, before adding the chocolate to the remaining batter. Add cocoa powder and spices to batter and mix. Pour batter in a greased 8x8 pan. Bake cake for 25 - 30 min. Each oven is different, so the time may vary, but you really don’t want to over bake the cake. The cake will appear dense and heavy, but it has a surprisingly light texture.
