    2 c. couscous
    3 small carrots
    1/4 c. garlic
    1/4 c. raisins
    1/4 tsp. salt
    1/2 cucumber, diced
    fresh thyme
    fresh oregano
    1/4 tsp. red pepper flakes


Bring 4 c. of water to boil in a large saucepan with carrots, raisins, herbs, garlic and salt. Stir in couscous and simmer covered for a few minutes. Remove from heat and let stand until water is absorbed. Fluff with fork and add cucumber.
Can be served warm or chilled.
