Ingredients

    2 peppers - red/green/yellow
    6 shallots
    1 butternut squash
    2 cups cherry/baby plum tomatoes
    4 cloves garlic
    2 tbsps olive oil
    3 tbsps fresh Basil

    1 red onion
    500g dried plain cous cous
    3 cups fresh orange juice
    2 chilli peppers
    1 pt vegetable stock (hot)
    1 tbsp Olive oil

Directions

Keep 1 onion, chilli, cous cous, orange juice and stock to one side.
Chop all other vegetables (Slice the squash in half.
Put veg into a roasting tin, stuff whole garlic into squash and pour over olive oil/ pepper rock salt (if desired)
Roast for about 30-40 minutes
10 minutes before the end, add cherry/plum tomatoes to the roasting dish and mix around.

In the meantime;
Finely chop onion and chilli peppers and fry gently in the remaining oil.
Add orange juice and stock and bring liquid to boil.
Add Cous Cous and cover .
Stir and seperate with fork regularly.
Leave for about 15 minutes or until cous cous is tender.

Serve Cous Cous with roasted vegetables as a very colourful and tasty side dish or as a light supper/lunch
