Ingredients

    --DOUGH-- 1 c. sour cream 4.5 c. flour 5 eggs (seperated) use the yolks here 1 pkg. dry yeast 1 tsp baking soda 1/2 lb (2 sticks) butter (softened) --NUT FILLING--- 1/2 lb (227 g.) walnuts (ground) 1/2 box graham crackers (14.4 oz size) 1 C. sugar (+3/4 c. for rolling 1 stick butter (or margarine) melted 5 egg whites (whipped) 1 tsp. vanilla

**NOTE; this is very very important place empty cookie sheet on lower rack of oven to deflect heat or the rolls will crack!! My oven is: 335 degrees 27-28 minutes for lighter silpat 330 degrees 26-27 minutes for darker (original) silpat


Directions

preheat oven 325-350 degree --Dough: Combine dry, add eggs and butter, split into 4 balls- wrap in plastic wrap or into ziploc bags- chill overnight (or at least 4 hours). Remove from fridge, knead then roll-out on granulated sugar covered surface, fill w/ 3/4 cup nut filling. (see below), roll like a jelly roll except fold over edge of sides to keep filling in. --Filling--- process to fine- walnuts + graham crackers, add granulated sugar, add melted butter. Combine. In large mixing bowl whip egg whites and vanilla until stiff, fold into nut mixture until incorporated **NOTE; this is very very important place empty cookie sheet on lower rack of oven to deflect heat or the rolls will crack!! Serving Size: 20 slices /roll = 4 rolls = 80 servings
