    1/2 chicken breast, cooked and diced
    4 cups non-fat chicken broth
    1 15 oz. can creamed corn
    1 Tablespoon grated fresh ginger
    1/2 tsp. black pepper
    1 Tabl. corn starch
    2 cups cooked brown rice
    3 egg whites, slightly frothed


Bring broth, chicken, ginger, corn, pepper to boil. Mix corn starch with 1/4 c. cold water and whisk into soup. Cook until slightly thickened and clear. Turn heat off. Drizzle egg whites into soup. They cook as they hit hot liquid. Add 2 cups cooked brown rice, if desired.
