Ingredients

    1-1/2 c. white whole wheat flour
    1/2 c. sugar
    2 tsp. baking powder
    1 can apricot halves in pear juice
    1/4 c. lucerne Best of the Egg
    2 tbsp. olive oil
    Pam

Directions

Drain and blend liquid from can of apricots with sugar, Best of Egg, and oil in one bowl.
Mix all other dry ingredients in another and then combine the two.
Pour into 9" square pan sprayed with Pam.
Bake for 30 minutes at 375 degrees.

    At first the apricots looked like egg yolks. The cake is good and the apricot adds just enough sweetness and tang. - 5/16/11
