    8oz neufchatel 1/3 less fat (1 bar) room temperature
    1 egg white lightly beaten
    1 1/2 tsp. vanilla extract
    1/4 C. Granulated sugar
    1/8 C. Stevia in the Raw
    1/8 C. amaretto (could sub almond flavoring maybe 1/2-1 TBSP, to taste)
    1/4 C. Skim Milk
    12 Reduced Fat Nilla Wafers

    For even less sugar content replace sugar/stevia ratio to 1/8 C. Sugar and 1/4 C. Stevia. Try adding other extracts. ( I added 1/2 tsp. strawberry and its very light. works well w/amaretto)


preheat oven to 350. line a muffin pan with cupcake liners. Place 1 nilla wafer in the bottom of each cup. Set aside.
In Medium bowl beat cream cheese on medium 30 sec.
Beat in milk, vanilla, stevia, and sugar until well combined. Stir in egg white. Spoon mix into cups approx 3/4 full.

Bake 20 minutes or until set. place pan on wire rack to cool for 10 min, then remove cheesecakes let cool 1 hour on wire rack.
Chill at least 3 hours.

the tops are not pretty when set. cover with a fresh fruit or pie topping if desired.
