Introduction

This delicious thick sauce is not exactly light, but I entered it here for calculation purposes and it is so good that I figured I would share. This delicious thick sauce is not exactly light, but I entered it here for calculation purposes and it is so good that I figured I would share.
Number of Servings: 4

Ingredients

    1/4 Cup Butter
    5 Cloves Garlic, grated
    1/2 Cup Flour
    2 Eggs, beaten
    2 Cups Homemade or Low Sodium Chicken Broth
    5 Tbsp Vinegar (cider or white)
    Pinch Salt

Directions

Heat broth, and keep warm.
Mix salt, garlic, and vinegar in a bowl.
Melt butter in a saucepan over low heat and whisk in flour, keep stirring.
Add vinegar mixture, and stir.
Add 1/2 cup of broth to beaten eggs and mix. Add to butter & garlic mixture.
Slowly add and mix in broth until the sauce reaches desired consistency. Sauce will thicken up over heat in about 2-3 minutes of stirring.

This sauce is delicious on chicken, pork or fish. I like to use it to top a meal of chicken and quinoa.

Makes enough sauce for about 4 chicken breasts.
