Tastes like Spaghetti-Oh's, faked my picky eaters out! Tastes like Spaghetti-Oh's, faked my picky eaters out!
Number of Servings: 6


    12 oz lean ground turkey
    3/4 cup RIce Krispies cereal
    1/4 cup milk
    1.5 cups pearled barley
    2 cups minced carrot
    1 large onion, minced
    1 6 oz can tomato paste
    2 Tbsp olive oil
    1 tsp dried thyme
    1 bay leaf
    1 tsp salt
    1 tsp black pepper
    4 cups water


Make meatballs: combine ground turkey with cereal and milk, season with salt and pepper. Form into 12 1 oz meatballs. Bake in a 350 degree oven for 20 minutes.

Make Soup: in large pot, heat olive oil over medium heat. Saute carrot and onion until softened. Add tomato paste, and seasonings. Pour in 4 cups hot water. Add barley. Stir well to combine. Add meatballs to soup. Simmer for 90 minutes or until barley is tender. Serve 2 meatballs per 1 cup portion.

Serving Size: Makes 6 servings with 2 meatballs each
