Introduction

Number of Servings: 4

Ingredients

    6 strips Turkey Bacon - lower fat/lower salt preferred
    2 cups fresh spinach, rinsed and patted dry
    1 Tbls Apple Cider Vinegar
    2 cups spring green mix or your favorite salad blend
    2 small tomatoes, cut into 8 wedges each
    2 Tbls mayonnaise
    1 tsp Worcestershire sauce
    1/2 tsp white pepper
    3 tsp canola oil

Directions

In a non-stick skillet, crisp the bacon strips in the canola oil. Remove bacon from skillet to paper towel lined plate to drain. In the still hot skillet, saute spinach and white pepper for 30 seconds to wilt. Add half of the cider vinegar and saute 30 seconds more. Empty contents of skillet into salad bowl. Add tomatoes and salad greens to bowl. Crumble or cut up bacon and add to bowl. Whisk together mayo, Worcestershire sauce and the remaining cider vinegar. Add to salad and toss to coat. Serve immediately.

Serving Size: Makes 4 side salads or 2 main dish salads
