This vegetable boosted pasta sauce is mildly spicy without adding any additional crushed red pepper. This vegetable boosted pasta sauce is mildly spicy without adding any additional crushed red pepper.
Number of Servings: 7


    1 Jar Bertoli Arrabbiata Spicy Tomato and Red Pepper Pasta Sauce
    3 carrots cut into match stick shapes
    1 stalk celery cut into 1/2 " sliced on the diagonal
    2 stalks Broccoli - cut into small florettes (about 2 cups)
    1/2 cup green bell pepper - sliced
    1/2 cup red bell pepper - sliced
    12 large mushrooms - cut into quarters or eighths
    1 large onion quartered then sliced
    4 cloves garlic minced
    1/4 t crushed red pepper (optional)
    5 leaves fresh basil - chopped (optional)
    1 T olive oil


1.) Prepare all vegetables as noted
2.) Heat olive oil in large deep saute pan over medium heat
3.) Add carrots, pepper, onion, mushrooms and celery and cook for a 5 or 7 minutes until they begin to soften.
4.) Add broccoli and garlic and stir well
5.) Cover pan tightly so that vegetables continue to cook/steam for 5 additional minutes or until broccoli is fork tender and bright green.
6.) Add full jar of Bertoli Arrabbiata pasta sauce. Stir ingredients.
7.) Leave on medium heat until sauce bubbles and is hot.
8.) Turn off heat, add bay leaves, cover pan and let stand for 10-15 minutes while pasta cooks.
9.) add crushed red pepper and/or basil if desired
10.) Remove bay leaves before serving

Serve over favorite pasta.
