    1 light english muffin
    1 wedge light garlic & herb laughing cow cheese
    1 piece light mozzarella string cheese, pulled into strips
    6 fresh basil leaves
    Canola oil spray
    2 thick slices heirloom tomato


Preheat oven to 375 degrees. Split english muffin and spread 1/2 wedge of cheese on each slice. Layer the mozzarella slices evenly on both halves. Lay 3 basil leaves on each slice. Spray a medium-high pan with canola spray. Fry tomato slices for 1 - 2 minutes per side. Remove from pan and put on top of each muffin half.
Place halves on a baking sheet sprayed lightly with canola oil spray. Bake until the cheese melts and english muffins are toasted, approximately 5 minutes.
