    2 Tbsp. unsalted butter
    2 yellow crookneck squash, medium
    2 zuchinni, medium
    8 oz. while button mushrooms, sliced
    7 cloves garlic
    .5 cup soy milk, regular
    .5 tsp. salt
    .5 tsp. fresh ground black pepper
    2 Tbsp. Parmesan Cheese, dried, grated


Using a vegetable peeler, cut sqash into ribbons lengthwise.

Melt butter in large skillet, add garlic and cook until just starting to brown. Add sliced mushrooms and squash ribbons. Cook over medium heat until squash almost done.

Add .5 cup soy milk, and allow simmer until the mixture is nearly dry.

Remove from heat, add salt, pepper, and sprinkle with Parmesan Cheese. Serve immediately.

Serving Size: makes 6 servings of .5 cup
