    2 lb chicken breast- chopped into 1" cubes
    2- 6oz can tomato paste
    8 oz neufchatel cheese
    2 tbs Curry powder
    1 tbs onion powder
    1 tsp ginger
    1 can diced tomato
    6 oz water
    2 cloves garlic- minced


Rinse chicken breasts and chop into small cubes.
Throw into a nonstick skillet add garlic when chicken is almost done.
Add tomato paste and stir in cheese and diced tomato and water
Add curry powder and seasonings
Cook over medium heat until chicken is cooked through.
Serve with rice
