Directions
Preheat oven to 425 F
Fill muffin cups with paper liners and spray with cooking spray.
Cover bran with milk and set aside.
Mix egg, agave, applesauce, zucchini, and vanilla and add to bran and milk.
Combine dry ingredients and stir to mix.
Add dry ingredients to eggs and milk.
Stir until blended.
Bake for 15-20 minutes or until the muffins are firm to touch or a tooth pick comes out clean.
