This is my mom's version of blueberry muffins. This is my mom's version of blueberry muffins.
Number of Servings: 17


    1.5 cup flour
    3/4 cup sugar
    2 tsp baking powder
    1/2 tsp salt
    1 egg
    3/4-1 cup skim milk
    1 small container unsweetened applesauce
    1.5 cups fresh blueberries, rinsed and sprinkled with 1tsp of the sugar


Pre-heat oven to 400 degrees. Mix dry ingredients together. Mix the milk, egg and applesauce together. Make a well with the dry ingredients, add the liquid ingredients into the well, mix just until blended. Do not over mix. The batter should be cake like vs. thicker like normal muffins. Add milk until right consistency. Fold in the blueberries. Sppon into greased foil liners, will make 14-18 muffins. Bake at 400 degrees for 25 minutes.
