Number of Servings: 11


    2 cups Quinoa, uncooked
    350g Carrot
    1T Canola Oil
    200g Onion
    2 medium Bell Peppers
    30g Almonds, slivered
    1/2 cup Raisins
    1cup Peas
    1/2t Turmeric
    1T Cinnamon


Dice Onions and Carrots. Sliver Almonds. Thaw Peas. Rinse Quinoa. Chop peppers.

Heat oil over med heat. Saute onions 5 min. Add carrots, salt and turmeric and cook for about 10 min. Add water and bring to boil. Add quinoa and stir to push it under water. Place peppers, almonds, raisins on top. Cover and simmer until quinoa is light and fluffy (25-30 min). Add peas during last 5 minutes. Sprinkle with cinnamon and serve.
