    1 large onion, chopped
    4 cloves garlic, minced
    1 T olive oil
    2 c chicken broth
    1 c dry quinoa
    1 lb skinless boneless wild sockeye salmon, chopped into 1" chunks
    1 15-ounce can diced tomato (not drained)
    2 c frozen spinach
    1 lemon, juiced and zest


In a large pot, heat oil over medium heat. Saute onion and garlic until soft and translucent.

Stir in quinoa, tomatoes, spinach and broth and simmer until quinoa is cooked through, about 20 minutes.

When quinoa is cooked, stir in salmon and cook for two minutes or until salmon is cooked through. Stir in lemon juice and zest.

Serving Size: 2 cups
